What Makes a Finishing Oil Worth Keeping on the Counter
The small sensory details that separate a reliable everyday oil from one you reach for at the very end.

A good finishing oil should do three things quickly: add aroma, add texture, and make the food beneath it taste more complete.
For everyday cooking, neutrality can be useful. For finishing, character matters. Look for balance rather than volume: a clean fruit note, a soft pepper finish, and enough roundness to sit on vegetables, beans, fish, bread, and salads without shouting.
The easiest test is bread and salt. Pour a little oil into a shallow dish, add a few flakes of salt, and taste slowly. If the flavour opens up instead of disappearing, it has a place on the counter.
