A useful pantry is not the fullest shelf. It is the shelf that answers the most questions.
Oil, salt, vinegar, grains, beans, tins, and a few preserved things can carry an entire week when each one earns its space. The best staples move between cuisines and moments: lunch at a desk, a late dinner, a weekend table with friends.
